The purpose of this paper is to undertake a job analysis for a selection procedure of the walkabout hotel.
A job title that will be analyzed in this project is “a pizza maker”
A pizza maker is expected to perform tasks in the pizza section of the Walkabout hotel for roughly 45 hours per week as a full-time staff. Work shift is changeable according to exceptional circumstances of the hotel such as functions, events, and the number of expected guests. An applicant who will have honored responsibility for this job position is required. An applicant who is willing to dedicate for unpredicted calls from the employer that is derived from exceptional circumstances is preferred. The staff’s accommodation is offered in the area of the walkabout hotel for a fee. The hotel is supposed to charge employees who wish to stay in the staff’s accommodation $ 155 for a week and the payment will be automatically deducted from a pay slip bi-weekly.
The Walkabout hotel is a company that offers accommodation in Australia.
The hotel has been providing reasonable budget accommodation for close to fifty years. The Walkabout hotel is located in Lot 944 Great Northern Highway in Port Hedland and is amazingly close to the Port Hedland International Airport. There are about thirty employees in the hotel and they work in various fields such as kitchen, housekeeping, bar, bistro.
There are several strengths that the Walkabout hotel has and they are likely to bring positive effects on its business. First, Port Hedland is well-known as a mining site. Miners are used to staying two weeks a month in the city. Since most of the miners are coming from the different countries or regions they are supposed to stay in hotels. Using the geographical feature, the hotel targets on not only tourist but also miners as its guests. Second, the hotel offers various entertainment facilities like a swimming pool, bar, banquet hall and kid’s cafe. These facilities support the hotel attracting customers. Third, the hotel holds some events and promotions to spur for running its profitable business. Sometimes, bands are invited to perform in the bar on the weekend and more than average number of customers come down to enjoy. Promotion on price is one more strategy that the hotel planned to attract customers.
The hotel provides the periodically changing discount system on a specific menu and launch new buffet menu for customers. Lastly, Port Hedland is not reputed as a tourist city in Australia so that tourists are barely found. For this reason, not many entrepreneurs are eager to operate a hotel in the city. Thus, there are a few competitors and low rivalry in the market place.
On the other hand, some weaknesses that influence on the business plan of the Walkabout hotel in an unwelcome way also exist. First of all, demographically, Port Hedland has a population of approximately 16000 and high Aboriginal rate of approximately 20%. Most of the aboriginal people are not affordable to spend money for additional expense such as eating out. Therefore, the number of target customers are extremely limited for the business. Owing to these demographical conditions, the Walkabout hotel cannot avoid the difficulty of attracting a large number of customers. Also, old facilities and interior in guest rooms, the hotel lounge, the bistro etc. does not make customers feel the vintage mood, but make them feel old-fashioned.
There are ten job tasks that are expected to be performed by a pizza maker.
Making an uncooked pizza: Making pizza is the task that should essentially perform by a pizza maker. A kitchen printer in the pizza section will print out an order history once waiters or waitress get an order. The maker is supposed to get the order paper from the printer and screen it for checking if an order includes a pizza order. If it does, the maker brings a tray with pre-made dough and starts to make a pizza base which is created by a combination of Napoli sauce and mozzarella cheese on the dough. After making a pizza base, the pizza maker put pizza toppings on the base. The type of pizza toppings to put on the base will vary from order to order.
Cooking a pizza in the oven: When a tray with an uncooked pizza is made, the employee put the tray in the oven to cook. The temperature inside the oven depends on depth and direction in the oven. The temperature inside the oven gets hotter toward the back and the side wall. Thus, after about 3 minutes to put the tray with uncooked pizza in the oven, the pizza tray should be turned around to cook all side of the pizza. About 1 minute 30 seconds later, the pizza tray should be removed from the oven to cook the bottom part of the pizza. Then 30 seconds later, the maker has to get the pizza out of the oven and cut it into 8 pieces of a pizza. If necessary, the maker sprays sauces or sprinkle power on the cooked pizza according to the types of pizza. Finally, the maker put the pizza on a box if a customer asked a takeaway pizza, otherwise, it has to be put on a wood tray.
Closing pizza section: Since the closing time of the pizza section is 10 pm the maker starts to sweep, mop the floor, wipe the shelves and fridge and replace topping containers with new ones from 9:30 pm. before finally close the section, the employee needs to make sure if the oven is turn off, the trash bin is empty.
Folding pizza boxes: If the employee does not have a lot of orders and is not busy, pizza boxes should be folded as preparation for the coming days.
The ingredients up: The pizza maker opens the fridge to check the topping stock once he or she goes to work. Toppings for pizza should be always prepared for upcoming 3 days. If required, the employee prepares toppings by following the instructions of the recipe. The recipe will be also given.
Making pizza dough: A pizza dough recipe will be given. The dough must be made according to the instructions in the recipe. When the dough is complete, store it in the fridge and allow it to ferment for a while. When the dough is fermented and the bulk rises, the employee makes dough into chunks and store them on plastic trays. Finally, the employee rolls the chunks. Once the chunks are rolled, they should be wrapped it on trays with the date of manufacture day.
Serving pizzas to the kitchen: The employee is expected to serve a pizza after being cooked in the kitchen when a customer wants to have a pizza in the bistro.
Displaying foods on buffet display stand: The employee takes the buffet foods from the kitchen and displays them on the display stand at around 3:50 pm while he or she prepares pizza dough and toppings.
Bringing the buffet foods in the kitchen: Since the buffet is supposed to close at 8:30 pm the employee bring the buffet foods in the kitchen.
Helping to close the kitchen: The employee starts to help to close the kitchen once the pizza section is closed. The employee performs tasks for closing the kitchen such as washing cooking utensils, cleaning grills, emptying trash bins out and sweep the floor etc.
Basically, the job position will be performed with English-speaker staffs and most of the customers are English speakers. The employee should be able to communicate proficiently in English. The ingredients employee is expected to be available to work as a team. Even though the pizza section is run by one, the job position requires working with other staffs in the hotel. All hospitality services that the Walkabout hotel provides are closely related to different fields in the hotel. Thus, giving full attention to other staffs’ message on working time is important. Also, as one of the members who offer services in the hotel, the employee is expected to convey information to people in the hotel effectively. A pizza maker must be able to work quickly and calmly in a fast-paced environment. A pizza maker has dedicated an employee with strong leadership skills that allow them to train and direct other kitchen staff efficient production of food. The employer wants a pizza maker with several core skills. As a pizza maker gains some experience, he or she has to become responsible for training newer kitchen members according to the recipe and in terms of all safety, sanitation, and food handling methods. A pizza maker should be able to have a flexible and open schedule for just in case of the pizza section is unexpectedly busy. Performing physical works is also one of the tasks that a pizza maker need to do. A pizza maker is essentially required to lift heavy stuff up to about 18 lbs. when he or she lifts a pizza dough container. Meanwhile, these core skills are required to be a pizza maker, an applicant who has knowledge of food preparing, handling and is capable of operating basic kitchen equipment is preferred.
The success of the walkabout hotel is directly related to the performance, productivity, and commitment of its employees including a pizza maker. The employer measures performance standard to evaluate, control the employees performing, and budget the financial plan. Also, measuring job performance effects on motivating employees and give a chance to be promoted to them.
There are no specific methods to measure job performances in the hotel, however, fast paced making beautiful pizzas will be considered as a worthy skill. A pizza maker can develop a new pizza menu once every two weeks as a special pizza menu. He or she will have an opportunity to decide toppings to put and name and price a new pizza. If the new pizza is being sold with customer’s positive opinion on the pizza and the gross sales of two weeks in the pizza section noticeably increase due to the special pizza menu and the new pizzas are the top 3 best-selling pizzas in a week. Appreciating his or her achievement, the pizza maker is going to get 4 percent bonus payment of bi-weekly wage.
The working environment of the position depends on a business situation. Basically, when it is busy due to a lot of orders the workers will be in the fast-paced environment and can feel some pressure on works. Because the pizza section is located beside the bistro and the bar, some noises may occur when many customers visit the hotel, especially when a band play performance for an event.
The job position always needs to deal with a pizza oven. A pizza maker is exposed to high levels of risk for their upper limbs. A pizza maker undergoes a risk of getting burnt.
