  • Abstract

The purpose of food traceability is significant in ensuring consumers are aware of where the food they consume is originating from. Within this project plan, our team proposes the idea of the food traceability block chain app with the objective to ensure consumers receive safe and healthy food. This proposal is presented to our client Global Food Industries, LLC to help them become a part of the food traceability block chain bandwagon for the welfare of the society. Also, encouraging fair practises from start to finish in the supply chain, ensure food wastage is avoided and avoiding counterfeiting in the food industry.

  • Introduction

Food is a significant part of a human being which makes it necessary to understand where the food ingredients are originating from. It is within this context that food traceability becomes a pivotal part of the food industry. The international food supply chain in today’s time has developed into a tangled web since firms are keen on improving their abilities to feed the world’s growing population. Emphasizing on food traceability would help firms have an apparent understanding and apply methods to trace the paths of products via the food chain (Fisher, 2015). The purpose of this project is to propose the integration of the block chain to “Global Food Industries, LLC” who can exploit the supply chain transparency and increased supplier and consumer satisfaction.

The Global Food Industries (GFI) was founded in 1992; it emerged as a world-class value-added frozen food manufacturing company situated in Sharjah. At the heart of the GFI, they fulfil the requirements of customers by offering them with tasty value-added food products. Dedicated to innovation and complying to strict standards; their brands fulfil the criteria of excellent taste, convenience and nutritional value. Two of their brands, Al Areesh and Arctic Gold provide unique taste; their diverse product portfolio includes: vegetable, meat, poultry and seafood range. The firm is determined to maintain a high reputation as the best frozen food company in selected markets (About us: GFI, n.d)

Safety and quality of food become a natural concern for consumers due to foodborne illnesses, recalls, fraudulent activities, unhygienic standards and so on. This issue will be tackled by designing the food block chain app which will help tackle the food traceability issue. One example is the mozzarella cheese, which has witnessed the impact of block chain technology; the Italian dairy firm Spinosa applied the first block chain certified entire Mozzarella DI Bufala Campana PDO. Every product is complete with a block chain quality certificate label and a QR code (Spencer, 2019)

  • Business requirements and constraints

After conducting a detailed research on the current trends of the block chain technology and the key requirements to run the business; our team was able to discover the business requirements to formulate and operate the food block chain app. Regarding the team meetings we had a total of[mention the number of team meetings you have had since I don’t know that?] meetings which were productive. We were able to brainstorm ideas and examine the advantages and setbacks of working on such a technology. Our meetings enabled us to remain focused on the goals and tasks. Also, developing credibility and communication channel which would help the team members to communicate efficiently and complete their work as per deadline. We met the client …[x times]; the client had their set of questions to ask us regarding the feasibility, success and technical specifications.

  • Business requirements: (1) Information needs to be logged pertaining to the events of such identifiers. (2) Identifications must be linked via the supply chain to ensure there is credibility of the information (How food traceability works, n.d) (3) Product and process are recorded. (4) Actors in the supply chain are technologically able to access the traceability information system. (5) Data extracted from traceability system is mapped to internal processes, enabling the maintenance of internal traceability. (6) Confidentiality requirements apply in regard to the transparency of actors in the supply chain (Behnke & Janssen, 2019)

  • Definitions: transparency, supply chain management, standardization, data governance, information sharing, boundary conditions, traceability, custom protocols, food block chain, food block chain app

  • Customer priorities: (1) Integrate the program into GFI’s processes and ensuring that all GFI stakeholders are willing to share information for coding purpose in the block chain. (2) ensuring there is room for sufficient trial and error through a pilot study before the project is launched. Once feedback is received from the pilot study that can help us improve on the weaknesses. (3) Actors involved in the supply chain need to have standardized information. All traceable resource units are utilized for external and internal traceability of products (Behnke & Janssen, 2019)

Food safety Information System

  • Constraints

  1. Data integrity: this is deeply stemmed in the hands of data collectors and requires a system of validation to avoid tampering.

  2. Unified system: implementing a definitive standards and regulations is one prominent obstacle to adoption

  3. Supply chain complexity: multiple actors with various systems since traceability would need the involvement and collaboration of actors & the complete supply chain to trace a product’s history (Blockchain use cases for food traceability and control, n.d)

  4. Coordinating across numerous, disbursed and usually disconnected supply chain actors.

  5. Expensive data reconciliation processes.

  • Stakeholder perspectives:

Our stakeholders will include: GFI, its stakeholders, employees, ingredient suppliers, processors, food service, retailers, wholesales, distributors, farmers, U.A.E Ministry of Health and the end product customers who consume the food. Some stakeholders may express their interest and comply with the changes made in the supply chain due to the advent of the food traceability block chain app. On the other hand, there may be some stakeholders who may hesitate to disclose information. Then there is the issue of transparency and auditability: lack of compatible information and digital abilities which makes sharing information across the supply chain difficult. Consider the fact the global supply chain includes various independent actors, i.e. Wholesales, farmers, processors, consumers, producers, transporters and others; the level of collaboration can be deeply restricted. Hesitance to share information or investing in a direct relationship enables room for sending, reconciling and validating information between various parties (Tracing the supply chain: Blockchain feasibility study, n.d)

  • Project scope statement

Formulating a block chain app is the at the heart of this project, which can be merged into the supply chain of Global Food Industries for food traceability to ensure safety for consumers. The block chain technology improves the transparency of the supply chain which can be used to avoid the numerous issues within the food supply chain. For instance: food loss, environmental hazard, food fraud and waste management. This project is only narrowing down its focus to “food traceability”. One of the main reasons for filtering it down to food traceability is due to the company’s concern on promoting good health. Also, the company would like to ensure their consumers receive the safest food which is why food traceability is an excellent initiative in employing block chain. The block chain ledger will be capturing the following information

  1. Block 1: Ledger of farmer input. For instance: fertilizers, herbicides and pesticides which can be used to grow ingredients and vegetables in animal feeds.

  2. Block 2: Ledger of certifiers in verifying and certifying the condition of production.

  3. Block 3: Ledger of food processors detailing the manufacturing procedure and ingredients added to accomplish the final product.

  4. Block 4: Ledger of distributors indicating conditions where the products are secured and transported.

  5. Block 5: Ledger of retailers indicating the condition, quality and quantity of produce at the time of reception from distributors.

  6. Block 6: App for consumer verification and the ability to track food item from the source.

Components in the supply chain

An evaluation methodology is ideal for this project. There are four primary concepts shown in the illustration which can be employed in our project as areas for evaluation: traceability, block chain, trust and infrastructure (Holmberg & Aquist, 2018)

  1. Goals: to ensure our project fulfils the standards, quality, technical specifications and requirements of developing a food traceability block chain app for GFI.

  2. Size of team [how many members in this team?]

  1. Evaluation criteria: efficiency, impacts, sustainability & effectiveness.

  2. Methods to be followed to perform the evaluation: a repetitive procedure of collating information by conducting primary and secondary research and interviews with the GFI (i.e. expressing their intentions since they are the client). Also, referring to examples of other retailers and the food industry to examine the standards and quality they have followed, and successful outcomes achieved.
