Researchers have contended that our bodies have become resistant to insulin, and an insulin resistant diet could have significant positive benefits. This paper will explain insulin resistance and the benefits that can be gained from an insulin resistant diet.
At the foundation of the problem is that too many processed carbohydrates,
fast foods, high fat content foods, and high fructose corn syrup are consumed in the average diet. Not all carbohydrates are bad, but the bad ones are found in "white bread, chips, snacks and other baked or fried foods that have been mechanically processed. These carbs are bad for you because during processing, much or all of the dietary fiber is removed from them, and your body cannot process these new complex carbs with efficiency" (Mason, 2005). In response to these bad carbohydrates, the body over-produces insulin and eventually develops a resistance to it. In addition, "intake of dietary fat, particularly saturated fat, appears to be associated with insulin resistance in animals and humans and may predispose to the development of diabetes" (Bessesen, 2001, p.2786S). Gone unchecked, these patients will gain weight and will eventually develop Type 2 Diabetes.
