Below is a sample one-day menu for Mrs. Smith. Her doctor just told her she is at risk for developing heart disease since her cholesterol is a little high. The doctor has asked her to meet with a registered dietitian to learn more about heart-healthy fats to include and which unhealthy fats to avoid. She hopes to meet with a dietitian next week, but in the meantime, she needs help making these changes.

List five suggestions for Mrs. Smith’s diet to replace the unhealthy fats source. Tell her which food she should omit and with what you would replace it. You may also change portion sizes. Highlight (yellow only please) or bold the item you are changing and then write the change next to that. You may make more than five changes, but if you do, you will only receive full credit when all changes correctly match the assigned directions.

Student has responded to all parts of the question.  Uses complete sentences/paragraphs.  Demonstrates strong English skills.  Uses  supporting evidence from appropriate academic references.  Meets length requirement.  References in APA format.

Part B 

Student has provided 5 appropriate suggestions.  These eliminate the targeted food/nutrient while increasing the desired food/nutrient.

Students that have provided more than 5 changes and some of those changes are incorrect (with at least 5 correct changes) for the assigned task will earn 9 points.  Unless made clear which changes are targeting the nutrient assigned, the changes made can't accurately assess understanding of food sources of the nutrient.
