What is amylase? Where is it found? What does it do?

Amylase is an enzyme that digests starch.

Amylase breaks starch down into maltose. It is secreted by the pancreas and the salivary glands in the digestive system.

Salivary amylase is found in our spit (saliva). Here is video showing how this enzyme will break down starch molecules.
