It is important to get the pan to the right temperature. If the pan is not hot enough, this will stew the meat, and if it is too hot, the outside will burn before the inside is even cooked (Johnson, 2010). In order to tell if the heat is just right, you can hold your hand over the pan (Johnson, 2010). If it is too hot for your hand, remove the pan from the heat for a few seconds. If it seems not very warm, increase the heat a little (Johnson, 2010). After preparation, it is cooking time.
